Crispy Greek zucchini fritters, coated in breadcrumbs, pan-fried in olive oil for a light and delicious appetizer or side dish.
Ingredients:
  • 2 large zucchini
  • 2.5 teaspoons salt, divided
  • 0.5 cup water, at room temperature
  • 2 tablespoons flaxseed meal
  • 0.5 cup shredded onion
  • 0.5 cup shredded potato
  • 0.5 cup fine dry bread crumbs
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon zest
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup shredded carrot
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup olive oil
Instructions:
  • Grate zucchini into a colander, then scatter around 2 teaspoons of salt. Let it sit over the sink for 20 minutes to drain.
  • Combine water and flaxseed meal thoroughly and let it sit for 10 minutes.
  • Drain excess liquid from onions and potatoes by gently squeezing them in a clean tea towel over the sink. Set aside.
  • In a big bowl, mix together bread crumbs, mint, dill, parsley, lemon zest, pepper, nutmeg, and the flaxseed meal mixture until well combined.
  • Gently rinse shredded zucchini and squeeze out excess liquid using a tea towel. Mix zucchini, shredded onion, potato, and carrot with bread crumbs. Incorporate flour and baking powder by hand. Rest mixture on the counter for at least 10 minutes or up to 3 days chilled in the refrigerator.
  • Warm 3 tablespoons of oil in a shallow frying pan over medium heat, being mindful not to let it smoke.
  • Form 1/3-cup portions of zucchini mixture into balls using your hands. Add balls to the hot oil and gently flatten into patties. Fry until browned for 2 to 3 minutes, then flip and fry until crispy and golden brown for another 2 to 3 minutes. Transfer to a paper towel-lined plate. Repeat with remaining balls, adding 2 tablespoons of oil before each batch. Serve.
