Umami-rich konbu seaweed dashi enhances the flavor of Japanese soups and dishes.
Ingredients:
  • 1 (4 inch) piece dashi kombu (dried kelp)
  • 4 cups water
Instructions:
  • Gently clean the kombu by wiping it with a damp cloth. Cut it into 1-inch pieces and add to a saucepan with water. Bring to a boil, then simmer over medium-low heat for 20 minutes. Let it rest off the heat briefly. Strain through a mesh strainer before using.
