Easy Korean rice cake with dried fruit - perfect for beginners!
Ingredients:
  • 2 teaspoons oil, or as needed
  • 1.5 cups milk
  • 1 egg
  • 2 cups glutinous rice flour
  • 0.25 cup white sugar
  • 1 teaspoon baking powder
  • 2 cups chopped dried mixed fruit
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan with oil.
  • Combine the milk and egg by whisking in a bowl.
  • Combine rice flour, sugar, baking powder, and salt in a separate bowl. Blend in milk mixture until mixed well. Gently fold in dried fruit. Transfer batter to the prepared baking pan.
  • Bake in preheated oven until edges are golden brown, approximately 1 hour. Allow to cool completely for 20 to 30 minutes before slicing.
