Tteokbokki (Spicy Korean Rice Cakes)

Quick and popular Korean street food: Tteokbokki. Soft and chewy rice cakes in sweet, spicy gochujang sauce. Ready in 30 minutes.
Ingredients:
  • 2 large eggs
  • 1 tablespoon vegetable oil
  • 1 small yellow onion, cut into 1/2-inch halfmoons
  • 3 green cabbage leaves, cut into 2-inch squares
  • 2 cloves garlic, minced
  • 1 1/2 cups water
  • 1 pound (about 3 cups) garaetteok (cylindrical Korean rice cakes)
  • 2 scallions, ends trimmed and cut into 2-inch pieces
  • 3 tablespoons gochujang
  • 1 tablespoon soy sauce, plus more to taste
  • 2 teaspoons sugar, plus more to taste
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon toasted sesame seeds
Instructions:
  • Prepare an ice water bath in a medium bowl and set it aside. Bring 3 inches of water to a boil in a small saucepan over medium-high heat. Gently add cold eggs to the boiling water and cook for 8 minutes. Transfer the eggs to the ice water bath using a large spoon to cool them down quickly. Once cold, peel and halve the eggs lengthwise, then set aside.
  • In a hot 12-inch skillet, sauté onions, cabbage, and garlic in oil for about 3 minutes until translucent and slightly browned, stirring frequently.
  • Combine the water, tteok, scallions, gochujang, soy sauce, and sugar in the pot. Stir until the gochujang is completely dissolved in the sauce.
  • Simmer the tteokbokki in the sauce for about 10 minutes on low heat, stirring occasionally to ensure the tteok are well coated. Aim for a glossy finish and the perfect chewy texture - they should be tender but not mushy. Test doneness by gently cutting the tteok with the side of a spoon.
  • Drizzle in the aromatic sesame oil and season: Mix it well to infuse the dish with its rich taste. Try the sauce and tweak the seasoning with extra soy sauce or sugar as needed. Aim for a delectably balanced blend of flavors – a touch of sweetness to complement the kick of spice.
  • Present the tteokbokki: Place the tteokbokki on a platter, sprinkle sesame seeds, and serve with hard-boiled eggs. For the perfect bite, wrap tteok with onion and cabbage, dip in the sauce, and enjoy with a bite of egg. Share your thoughts on this recipe below!
