Slow cooker Korean baby back ribs marinated in ginger, garlic, scallions, rice wine, and orange juice.
Ingredients:
  • 2 pounds baby back pork ribs
  • 1 teaspoon salt, or to taste
  • 1 tablespoon canola oil
  • 0.5 cup soy sauce
  • 0.5 cup light soy sauce
  • 0.5 cup rice wine
  • 0.5 onion, cut into quarters
  • 0.25 cup orange juice
  • 1 head garlic, chopped
  • 0.25 cup minced fresh ginger root
  • 1 jalapeno pepper, chopped
  • 1 bunch scallions, trimmed and chopped
Instructions:
  • Rinse ribs and gently dry with a paper towel. Season ribs generously with salt.
  • Heat oil in a hot skillet. Add ribs and sear until golden brown on all sides, about 6 to 8 minutes, turning occasionally.
  • Transfer the seared ribs to a 3-quart slow cooker.
  • Combine soy sauce, light soy sauce, rice wine, onion, orange juice, garlic, ginger, and jalapeno in a blender. Blend until smooth. Pour the sauce over the ribs in the slow cooker. Cook on High for 3 to 4 hours until the meat is tender and pulls away easily from the bone.
  • Position the oven rack 6 inches below the heat source and preheat the broiler. Arrange the ribs on a baking sheet or roasting pan.
  • Broil ribs until perfectly charred, approximately 5 minutes. Top with fresh scallions for a finishing touch.
