Kalbi-Style Braised Beef Cheek Tacos

Tender braised beef cheeks infused with savory-sweet Kalbi flavors for delicious Korean-inspired tacos topped with kimchi.
Ingredients:
  • 1.5 pounds beef cheeks
  • 0.25 onion, sliced
  • 2 cloves garlic, chopped
  • 1 (10.75 ounce) can low-sodium chicken broth
  • 0.25 cup soy sauce
  • 2 green onions, cut into 2-inch pieces
  • 2 tablespoons white sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons toasted sesame seeds
  • 0.5 cup kimchi, or to taste
  • 8 (6 inch) flour tortillas
Instructions:
  • Preheat a large pot over medium-high heat. Sear beef cheeks until golden on both sides for about 5 minutes. Add onion and garlic, sauté until onion softens, about 5 minutes.
  • Combine chicken broth, soy sauce, green onions, sugar, and sesame oil in the pot and bring to a boil. Lower the heat and simmer until beef cheeks are tender, approximately 2 hours.
  • Use a slotted spoon to transfer the beef cheeks from the pot to a cutting board. Cut the beef into bite-size pieces and then arrange on a dish, sprinkling generously with sesame seeds.
  • Top each tortilla with a generous scoop of beef and a heaping serving of kimchi.
