Tangy cucumber-carrot salad with sesame seeds, perfect pairing with Korean bulgogi.
Ingredients:
  • 0.25 cup white vinegar
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon vegetable oil
  • 2 tablespoons sesame seeds
  • 1 cucumber, thinly sliced
  • 0.5 green onion, sliced
  • 0.5 carrot, julienned
Instructions:
  • Combine vinegar, black pepper, and red pepper flakes in a medium bowl, stirring until well mixed.
  • - Heat oil in a saucepan over medium-high heat. Add sesame seeds and cook until brown, about 5 minutes. Use a slotted spoon to transfer seeds to a vinegar mixture. Stir in cucumber, green onions, and carrot. Cover and chill in the refrigerator for at least 5 minutes.
