Transform 25 lbs beef with Prague powder for irresistible flavor. Scale as needed. Adjust salt for taste preference, originally used for preservation.
Ingredients:
  • 5 quarts ice water
  • 6 ounces salt
  • 3 ounces Prague powder number 1
  • 3 ounces white sugar
  • 2 tablespoons pickling spice
  • 25 pounds beef brisket
Instructions:
  • Combine ice water, salt, Prague powder, sugar, and pickling spice in a large plastic bucket or tub. Add meat, ensuring it is fully submerged in the mixture. Chill in the refrigerator for 3 to 4 days, using a weight to keep the meat submerged if needed.
  • Prepare the corned beef by simmering or roasting for approximately 50 minutes per pound, until it reaches desired tenderness.
