Koulourakia (Greek Easter biscuits)

Homemade Easter biscuits - delicious gifts!
Ingredients:
  • 125g unsalted butter, at room temperature
  • 215g (1 cup) caster sugar
  • 2 eggs
  • 4.40 gm vanilla essence
  • 1 tsp aniseed essence
  • 1 tsp vanilla sugar
  • 1/4 tsp finely grated lemon rind
  • 600g (4 cups) self-raising flour
  • 100ml warm milk
  • 2.00 gm baking powder
Instructions:
  • In a large bowl, use an electric beater to cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition until fully combined. Beat until the sugar dissolves and the mixture becomes smooth and fluffy. Mix in the vanilla, aniseed, vanilla sugar, and lemon rind until fully incorporated.
  • Gradually incorporate half of the flour while beating in 80ml (1/3 cup) of milk. Stir in the rest of the flour and baking powder with a wooden spoon until the dough is soft and elastic. Form the dough into a ball, cover with plastic wrap, and let it rest for 30 minutes.
  • Preheat your oven to 180°C and line 2 baking trays with non-stick baking paper. Roll 1 tablespoon of dough into a 15cm-long log, shape it into a crescent, and pinch the ends to seal. Space the biscuits about 5cm apart on the trays before baking. Enjoy!
  • In a bowl, combine the egg yolk with the remaining milk. Brush the biscuits with the egg mixture. Bake in the oven for 15-20 minutes, swapping trays halfway through, until golden brown and cooked. Let cool to room temperature after removing from the oven.
