Delicious Greek Christmas cookies to delight the whole family during the holidays.
Ingredients:
  • 250g unsalted butter, at room temperature, cubed
  • 120g icing sugar
  • 1 egg yolk
  • 150g plain flour
  • 150g self-raising flour
  • 75g slivered almonds, toasted, finely chopped
  • Whole cloves (about 20)
  • Icing sugar, extra, to dust
Instructions:
  • Preheat the oven to 160°C. Line a big baking tray with non-stick baking paper. In a large bowl, use an electric beater to whip the butter until it's pale and creamy. Then, mix in the icing sugar and egg yolk until well combined.
  • Gently incorporate the flours until mixed. Add the almonds and stir.
  • Roll tablespoonfuls of the mixture into balls and shape them into 8cm lengths on a floured surface, forming crescent shapes. Place them on a tray. Optionally, reserve half of the dough to make star-shaped biscuits. Roll it out to about 2cm thickness on a floured surface, then cut out biscuits using a 6-7cm star cutter. Place them on the tray.
  • Press a clove into the center of each biscuit. Bake for 15-20 minutes until lightly golden. Place the warm biscuits on a wire rack over a baking tray. Sprinkle with a touch of icing sugar and let them cool completely. Dust generously with more icing sugar.
