Almond butter biscuits

Traditional Greek Christmas almond biscuits - Kourabiedes.
Ingredients:
  • 250g butter, softened
  • 1 tsp vanilla bean paste
  • 100.00 gm almond meal
  • 112.50 gm icing sugar mixture
  • 500.00 ml plain flour
  • 120g packet flaked almonds
  • Extra icing sugar mixture, for dusting
Instructions:
  • Preheat your oven to 170C/150C fan-forced and prepare 3 large baking trays by lining them with baking paper.
  • With an electric mixer, whip together butter, vanilla, and lemon zest until fluffy. Gradually add egg yolks one at a time, mixing until just blended. Fold in almond meal, powdered sugar, and flour until fully combined.
  • Take a level tablespoon of the mixture and roll it into a log shape. Then, coat it with flaked almonds and shape it into a crescent. Place it on a prepared tray. Repeat this process with the remaining mixture and almonds, spacing the crescents 4cm apart on the trays.
  • Bake one tray at a time for 15 to 20 minutes until pale golden. Allow to cool on trays for 5 minutes, then transfer carefully to a wire rack lined with baking paper to cool completely.
  • Generously sprinkle biscuits with powdered sugar before serving.
