Fluffy vegan biscuits made with almond milk and coconut oil, perfect with jam or vegan butter.
Ingredients:
  • 2 cups (270 g) all purpose flour
  • 3 tablespoons (40 g) sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 5 tablespoons melted coconut oil, divided (use neutral tasting coconut oil)
  • 1/2 cup (120 ml) unsweetened almond milk
  • 1 tablespoon white vinegar
  • 1/2 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 450°F.
  • Combine the dry ingredients: Whisk flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  • Enhance the flour with coconut oil by blending 2 tablespoons of melted coconut oil into the flour mixture until well combined.
  • Combine almond milk, vinegar, and vanilla extract. Pour the mixture into the center of the flour. Add 3 tablespoons of melted coconut oil. Stir gently until the dough forms, being careful not to overmix. If the dough is dry, add a few drops of water.
  • Form the biscuits: Portion the dough into 6 roughly equal parts and spoon onto a greased parchment- or silicone-lined baking sheet, 2 inches apart.
  • Bake the biscuits at 450°F for 11 to 13 minutes until lightly browned on top and firm when pressed.
  • Allow the dish to rest for 5 minutes before indulging. For optimal enjoyment, serve while warm. To freeze, cool to room temperature and transfer to a freezer bag.
