Irresistible vegan chai cookies, ideal for tea pairing.
Ingredients:
  • 250g butter, at room temperature
  • 225.00 gm brown sugar
  • 20.00 ml chai tea (see note)
  • 500.00 ml plain flour
  • 65.00 gm rice flour
  • 42.90 gm cornflour
  • 41.20 gm milk
  • 107.50 gm demerara sugar
Instructions:
  • With an electric mixer, whip together butter, brown sugar, and chai tea until light and fluffy. Mix in flours and milk until dough forms.
  • Divide the dough in half and shape each portion into a 25cm log. Cover with plastic wrap and refrigerate for 1 hour.
  • Preheat your oven to 160°C (or 140°C fan-forced) and prepare 3 large trays by lining them with baking paper.
  • Take one log at a time and spread half of the demerara sugar on a sheet of baking paper. Roll the log in sugar, gently pressing to ensure it sticks. Cut into approximately 1cm slices, arrange on baking trays with 3cm spacing. Repeat with the second log and remaining sugar. Bake for 25 minutes, then cool on the trays.
