Taylor Swift-inspired chai sugar cookies.
Ingredients:
  • 250g butter, chopped, at room temperature
  • 110g (½ cup) caster sugar
  • 80g (½ cup) Soft Icing Mixture
  • 2 chai tea bags
  • 1 egg
  • 8.80 gm vanilla extract
  • 300g (2 cups) plain flour
  • 4.00 gm baking powder
  • 230g (1 1/2 cups) Soft Icing Mixture, sifted
  • 25g butter, at room temperature
  • 20.60 gm milk, or water, plus extra, if needed
  • ¼ tsp ground allspice
  • ¼ tsp ground cinnamon
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and prepare 2 baking trays by lining them with baking paper.
  • In a bowl, use electric beaters to cream the butter, sugar, and icing mixture until pale and creamy. Mix in the contents of the chai tea bags until combined. Add the egg and vanilla, and beat until well combined.
  • In a bowl, gently sift together the flour and baking powder. Stir with a spoon or flat-bladed knife until the dough forms.
  • Scoop dough onto trays, spacing 4cm apart. Gently press down on each mound with the heel of your hand.
  • Bake both trays together until golden brown (12-15 minutes). Let the cookies cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
  • Make the icing by mixing the icing mixture, butter, milk, and spices in a bowl using a wooden spoon until smooth. For a shinier consistency, stir in a touch more milk or water until well combined.
  • Ice the cooled cookies and allow them to set before serving.
