Stir-Fried Asian Beef and Noodles

Effortlessly craft a vibrant and flavorful Asian dish using convenient frozen veggies, tailor-made to suit your tastes.
Ingredients:
  • 1 pound beef boneless sirloin or round steak
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon soy sauce
  • 1 package (about 6 ounces) rice stick noodles
  • 1 tablespoon finely chopped gingerroot
  • 1 clove garlic, finely chopped
  • 1 package (16 ounces) frozen broccoli, carrots, water chestnuts and red peppers, thawed
  • 3/4 cup Progresso™ beef flavored broth (from 32-ounce carton)
  • 1/3 cup rice or cider vinegar
  • 1/3 cup honey
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1/4 cup sliced green onions (3 medium)
Instructions:
  • Cut the beef into thin strips. Combine the beef, 1 tablespoon of vegetable oil, cornstarch, and 1/2 teaspoon of soy sauce in a glass or plastic bowl. Cover and refrigerate for 20 minutes. Meanwhile, soak the noodles in cold water for 5 minutes, then drain.
  • Heat a wok or 12-inch skillet over medium-high heat until hot. Add 1 tablespoon of vegetable oil and swirl to coat the pan. Stir-fry the gingerroot and garlic for 30 seconds. Add the vegetables and stir-fry until they are crisp-tender. Remove the vegetables from the wok.
  • Heat up the wok with 1 tablespoon of vegetable oil until it's nicely coated. Add the beef and stir-fry until it's browned. Remove the beef from the wok.
  • Pour the broth, vinegar, honey, 3 tablespoons of soy sauce, and red pepper into the wok. Mix in the noodles and bring to a boil. Simmer over medium heat for about 2 minutes, stirring occasionally, until the noodles are tender. Add the beef, vegetables, and onions; continue to cook and stir for 1 minute.
