Kulich: Fruit-filled yeast cake symbolizing Russian Orthodox church domes. Easter tradition to bless and share at church.
Ingredients:
  • Paskha (see related recipe), to serve
  • 20.60 gm milk
  • 60ml sherry
  • 45g sultana
  • 50g raisins
  • 45g currants
  • 1/2 tsp saffron threads
  • 60ml milk
  • 3 tsp (1 1/2 sachets/10g) dried yeast
  • 100g caster sugar
  • 300g plain flour
  • 1 egg
  • 60g butter, melted
  • 2 tsp finely grated lemon rind
  • 150g icing sugar mixture
Instructions:
  • In a small saucepan, gently warm sherry, sultanas, raisins, currants, and saffron for 1 minute until just heated through. Let it sit for 30 minutes to infuse the flavors.
  • In a small bowl, mix together the milk, yeast, and 1 tablespoon of sugar. Let it sit for 5 minutes until it becomes frothy.
  • In a large bowl, combine flour and remaining sugar. Add sherry mixture, milk mixture, egg, butter, and lemon rind. Stir with a wooden spoon until just combined. Transfer the dough onto a lightly floured surface and knead gently for 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm, draft-free place for 2 hours until doubled in size.
  • Preheat the oven to 200°C. Grease and line a 10cm round cake pan with baking paper, ensuring the sides are covered with a double layer that extends 15cm above the pan. Gently knead the dough on a floured surface for 2 minutes until smooth, then shape it into a ball. Place the dough in the lined pan and let it rise for 1 hour or until doubled in size. Bake for 10 minutes in the preheated oven, then reduce the temperature to 180°C and bake for another 20 minutes until golden brown and the loaf sounds hollow when tapped. Cool on a wire rack.
  • Whisk together icing sugar and a bit of milk until smooth. Drizzle over the kulich and let it set. Cut into slices and enjoy with paskha.
