Ingredients:
  • 125.00 ml raisins
  • 62.50 ml rum
  • 257.50 gm warm milk
  • 2 x 8g pkts dried yeast
  • 4.50 gm sugar
  • 1000.00 ml plain flour
  • 161.25 gm caster sugar
  • 1.20 gm salt
  • 4 egg yolks
  • 4.40 gm vanilla essence
  • 150g butter, cubed
  • 62.50 ml slivered almonds (and raisins)
Instructions:
  • Infuse 1/2 cup of plump raisins in 1/4 cup of rich rum for 10 minutes, then strain, saving the flavorful rum. Next, blend 1 cup of warm milk with two 8g packets of dried yeast and a hint of sugar. Let it sit undisturbed for 10 minutes to activate.
  • In a large bowl, mix 4 cups of plain flour, 3/4 cup of caster sugar, and 1/2 teaspoon of salt. Add the yeast mixture, reserved rum, 4 egg yolks, and 1 teaspoon of vanilla essence. Knead the dough for 10 minutes, then incorporate 150g of cubed butter by kneading it in.
  • Place the dough in a bowl coated with oil, cover, and let it rest for 1 hour. Preheat the oven to 170°C. Punch down the dough, then mix in 1/4 cup each of slivered almonds and raisins. Transfer the dough into a greased bread pan, cover, and let it rest for another 30 minutes. Bake for 1 hour.
