Ingredients:
  • 2 (7g each) sachets yeast
  • 75g caster sugar
  • 500g strong baker's flour
  • 1.25 gm ground cinnamon
  • 170.00 gm sultanas
  • Grated rind of 1 lemon
  • 8.00 eggs
  • 150ml milk
  • 60g unsalted butter, softened
  • 1 tsp red food colouring
Instructions:
  • In a bowl, combine yeast with 50ml warm water and 1 teaspoon sugar. Let it sit for 15 minutes until bubbles form on the surface.
  • Sift flour into a large bowl and mix in sugar, salt, cinnamon, sultanas, and rind. Combine with dissolved yeast, eggs, milk, butter, and water. Knead dough on a floured surface for 5 minutes until soft. Place in a greased bowl, cover, and let rise for about 1 hour. Punch down the dough, divide, plait, and transfer to a greased baking tray. Allow to rise for another hour.
  • To make colorful eggs, add eggs to a saucepan of cold water with food coloring and bring to a boil. Let them simmer for 10 minutes, then remove from heat and allow to cool in the pan for 30 minutes.
  • Heat your oven to 190°C.
  • Beat one more egg gently. Place the colored eggs in the middle of the braided bread and brush them with the beaten egg. Bake for 25 minutes until golden brown. Enjoy warm with butter.
