Ladybug Caprese Bites: A playful twist on classic Caprese.
Ingredients:
  • 1/3 cup balsamic vinegar
  • 1 8-oz package sliced fresh mozzarella cheese log
  • 12 fresh basil leaves
  • 6 grape or cherry tomatoes
  • 3 large pitted black olives
Instructions:
  • In a small saucepan, simmer balsamic vinegar over medium heat until reduced to about 2 tablespoons, thick, and syrupy, stirring occasionally (about 5 minutes). Remove from heat, transfer to a small container, and chill in the fridge to thicken further.
  • Halve each grape or cherry tomato lengthwise, then carefully cut a vertical slit down the center of each half to create "wings." Quarter each black olive.
  • Arrange 12 slices of mozzarella on a platter and gently dry with a paper towel. Add a basil leaf on top of each slice. Place half a grape or cherry tomato on the basil leaf, then place an olive piece on top to create the ladybug's head. Repeat with the rest of the tomatoes and olives.
  • Take the balsamic reduction out of the fridge. Use a toothpick to dot the reduction all over the grape tomatoes to create ladybug markings. Repeat for each ladybug.
  • Drizzle with the remaining balsamic reduction, extra virgin olive oil, and sprinkle with sea salt and freshly ground black pepper just before serving.
