Popular lamb pasta recipe loved by Taste members for its delicious flavor and quick preparation.
Ingredients:
  • 400g tortiglioni or penne rigate
  • 18.20 gm olive oil
  • 1 small onion, finely chopped
  • 4 to 5 anchovies, drained, chopped
  • 500g lamb mince
  • 42.00 gm lemon juice
  • 3 vine-ripened tomatoes, chopped
  • 125.00 ml feta cheese, crumbled
  • 62.50 ml mint leaves, chopped
  • 125.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • Prepare pasta according to the instructions on the package.
  • Heat oil in a frying pan over medium heat, then sauté onion for 3 to 4 minutes. Add garlic and anchovies, and cook for 1 minute until anchovies dissolve.
  • Turn up the heat to medium-high and add the mince. Cook while stirring with a wooden spoon for about 3 minutes until the mince is nicely browned. Stir in lemon juice, tomatoes, salt, and pepper and cook for 4 to 5 minutes until the tomatoes soften. Remove from heat.
  • After draining the pasta, transfer it back to the pan. Mix it with the cooked mince, crumbled feta, fresh mint, and parsley. Toss everything together until combined. Finally, season with salt and pepper before serving.
