Create a quick and budget-friendly dinner with only six ingredients!
Ingredients:
  • 600g diced lamb
  • 175.00 gm balti curry paste
  • 450g sebago potatoes, peeled, cut into 2cm pieces
  • 150g baby spinach
Instructions:
  • In a large, heavy-based saucepan, heat half of the oil over high heat. Add half of the lamb and cook, stirring, for 3 to 4 minutes until browned. Transfer to a bowl and repeat with the remaining oil and lamb.
  • Heat the curry paste and potatoes in a pan over medium-high heat until fragrant. Add the tomato and stir. Return the lamb to the pan, cover, and bring to a boil. Reduce the heat to low and simmer for 30 minutes until the lamb is tender.
  • Add fresh spinach leaves to the pan and cook for 1 to 2 minutes, stirring occasionally until wilted.
