Seeded mustard and spinach potato mash

Elevate classic dish with mustard and spinach, serve with roast lamb or beef.
Ingredients:
  • 1kg Sebago potatoes, peeled, chopped
  • 40g butter, chopped
  • 125ml (1/2 cup) milk, warmed
  • 23.40 gm wholegrain mustard
  • 50g baby spinach leaves
  • Butter, extra, to serve
Instructions:
  • In a saucepan, simmer the potato in cold water until tender, about 25 minutes. Drain, then return to the pan. Stir over low heat for 2-3 minutes until dry. Mash the potato until smooth using a potato masher, then slowly mix in the butter and milk. Season with salt and white pepper to taste.
  • Gently fold in mustard and spinach until just wilted. Finish with a generous knob of butter on top.
