Seeded Irish brown bread

Make aromatic seeded bread at home for that fresh baked bread scent.
Ingredients:
  • 75g pepitas
  • 80g sunflower seeds
  • 125g plain flour
  • 350g wholemeal flour, plus extra to dust
  • 15g wheat germ (see note)
  • 2.50 gm bicarbonate of soda
  • 400ml buttermilk
  • 20.00 ml poppy seeds
  • 12.00 gm sesame seeds
Instructions:
  • Heat the oven to 180ºC.
  • Spread half of the pepitas and sunflower seeds on a baking tray. Toast in the oven for 8-10 minutes until lightly golden brown. Let cool.
  • In a large mixing bowl, sift plain flour and wholemeal flour, then add wheat germ, bicarbonate of soda, and 1 teaspoon of salt. Stir well, then add toasted pepitas and sunflower seeds. Create a well in the center, pour in the buttermilk, and mix into a sticky dough.
  • Move the dough to a lightly floured surface and delicately knead with floured hands until shaping into one large or two smaller rounds, based on your preference.
  • Make a 1cm deep cross on top of the loaf/loaves using a sharp knife. Brush the dough with water and sprinkle poppy, sesame seeds, pepitas, and sunflower seeds on top. Bake in the oven for 40-45 minutes until the bottom sounds hollow when tapped.
