Irresistible freshly baked loaf vanishes in no time.
Ingredients:
  • Olive oil, to grease
  • 450g (3 cups) plain bread flour (see note)
  • 20.00 ml (14g/2 sachets) dried yeast
  • 10.00 gm caster sugar
  • 1.20 gm salt
  • 250ml (1 cup) warm milk
  • 40.00 gm melted butter
  • 20.00 ml linseeds
  • 20.00 ml poppy seeds
  • 20.00 ml pumpkin kernels (pepitas)
  • 24.00 gm sesame seeds
  • Milk, to brush
Instructions:
  • In a large bowl, mix together flour, yeast, and sugar. Stir in salt, then create a well in the center. Pour in milk and add butter.
  • Stir the mixture with a wooden spoon until well combined, then use your hands to bring the dough together in the bowl. Transfer to a lightly floured surface and knead for 10 minutes or until the dough is smooth and elastic.
  • Grease a large bowl with olive oil. Place the dough in the bowl and cover with a damp tea towel. Allow it to rise in a warm, draft-free spot for 45 minutes to 1 hour, until the dough nearly doubles in size.
  • Using the force of your fist, create a depression in the center of the dough. Transfer the dough to a floured surface and knead for 2 minutes, or until it becomes elastic and returns to its initial size.
  • Preheat your oven to 200C. Lightly grease an 8cm-deep, 11 x 21cm loaf pan with olive oil.
  • Roll out the dough into a 30cm square using a lightly floured rolling pin. Sprinkle with linseeds, poppy seeds, pumpkin kernels, and 1 tablespoon of sesame seeds. Fold the dough in half, knead to combine, and shape into a 20cm-long loaf. Place in the prepared pan, cover with a damp tea towel, and let it prove in a warm, draught-free place for 30 minutes until almost doubled in size.
  • Gently coat the loaf's surface with milk and generously sprinkle with the leftover sesame seeds. Bake until golden and the loaf makes a hollow sound when tapped underneath, typically around 25-30 minutes. Transfer to a wire rack to cool slightly before serving at room temperature.
