Lamb and fetta flatbread

Crispy lamb flatbread with tangy Feta, red onion, and mint, served with creamy tzatziki for a quick and tasty meal.
Ingredients:
  • 4 large pita breads or pizza bases
  • 500g finely minced lean lamb
  • 1 200g pack Smooth Fetta, broken into small pieces
  • 2 medium ripe tomatoes, finely diced
  • 2.50 gm ground cinnamon
  • sea salt and freshly ground black pepper
  • extra virgin olive oil for drizzling.
  • ½ cup torn fresh mint leaves, to serve
  • Tzatziki, to serve
Instructions:
  • Combine the lamb mince, tomato, cinnamon, salt, and pepper in a large bowl. Place pita breads or pizza bases on two large baking trays and brush lightly with olive oil.
  • Thinly spread the lamb mix over the bases, embracing any gaps. Top with fine red onion slices and scatter with smooth Fetta pieces.
  • Bake in the oven for 12-15 minutes until the pita breads or pizza bases are crisp, the lamb is cooked through, and the Fetta starts to turn golden.
  • Garnish with fresh mint leaves and top with a dollop of creamy tzatziki before serving promptly.
