Easy lamb flatbread

Quick and delightful lamb mince pizza on flatbread.
Ingredients:
  • 1 large red onion
  • 27.30 gm extra virgin olive oil
  • 1 long fresh red chilli, thinly sliced
  • 10.00 gm ground cumin, plus extra, to sprinkle
  • 500g lamb mince
  • 22.20 gm tomato paste
  • 1 lemon, rind finely grated
  • 400g garlic Afghan bread
  • 90g (1/3 cup) Greek-style yoghurt
  • 100g soft feta, coarsely crumbled
  • 125.00 ml combined fresh herbs (mint and coriander leaves)
Instructions:
  • Preheat the oven to 230C/210C fan forced. Thinly slice half of the onion into rings and set aside. Finely chop the rest of the onion.
  • In a large non-stick frying pan over medium-high heat, warm 1 tablespoon of oil. Add chili and chopped onion, cook while stirring for 2 minutes until softened. Add cumin, stir for 30 seconds until fragrant. Turn heat to high, add the mince, and cook, breaking it up with a wooden spoon, for 4 minutes until browned. Stir in tomato paste for 1 minute, then add lemon rind and season to taste.
  • Spread the lamb mixture over the bread on a large baking tray. Add dollops of yogurt, crumble feta on top, and sprinkle with extra cumin. Bake for 15 minutes or until golden and crisp.
  • Juice half of the lemon and cut the remaining half into wedges. Mix the reserved onion, lemon juice, and remaining oil in a bowl. Season with herbs and let it marinate. Combine everything together.
  • Spread the onion mixture over the pizza and garnish with lemon wedges on the side.
