Fun and colorful family favorite with quick pickled cabbage for extra flavor. Easy 5-ingredient recipe using store-bought tortillas or make your own with simple swaps. Get creative and enjoy!
Ingredients:
  • 250 g minced lamb
  • 2 teaspoons rose harissa plus extra to serve
  • 250 g red cabbage
  • 2 seeded wholemeal tortillas or flatbreads
  • 2 tablespoons cottage cheese
Instructions:
  • Heat a griddle pan over high heat. Combine minced lamb and harissa by scrunching in your clean hands until well mixed. Divide into 6 pieces and shape into koftas with your fingertips, creating dents for extra texture. Cook on the griddle for 4 to 5 minutes on each side until golden and sizzling. Finely shred the red cabbage, season with salt, pepper, and 1 tablespoon of red wine vinegar, then quickly pickle by scrunching. Warm tortillas or flatbreads, top with cabbage, cottage cheese, koftas, a drizzle of extra harissa, and enjoy.
