Lamb and mint sausage rolls

Middle Eastern flavored lamb and pistachio filo sausage rolls: a delicious twist on a classic favorite!
Ingredients:
  • 1 slice day-old bread, crust removed
  • 60ml (1/4 cup) milk
  • 800g minced lamb
  • 1 onion, coarsely grated
  • 125.00 ml finely chopped mint leaves
  • 45g (1/3 cup) pistachios, roughly chopped
  • 2.50 gm sweet paprika
  • 5.00 gm ground cumin
  • 0.63 gm ground cinnamon
  • 1/4 tsp dried chilli flakes
  • 50g tomato paste
  • 2 eggs, lightly beaten
  • 375g packet filo pastry (see note)
  • Olive oil, to brush
  • 40.00 ml za’atar (see note)
  • 2 large red capsicums, halved, seeded
  • 1 red onion, thinly sliced
  • 32.00 gm brown sugar
  • 60ml (1/4 cup) olive oil
  • 60ml (1/4 cup) red wine vinegar
Instructions:
  • Preheat your oven to 190C. Combine all ingredients in a roasting pan. Roast on the bottom shelf for 45 minutes until capsicums are tender and skins blister slightly. Let cool for 10 minutes before using.
  • In a large bowl, soak bread and milk until soft. Mash the bread mixture using a fork. Add lamb, onion, mint, pistachios, spices, chilli flakes, tomato paste, eggs, and 1 teaspoon salt. Mix well with your hands until combined.
  • Layer 5 filo sheets, brushing each one with oil in between. Cover the rest of the filo sheets with a clean, damp tea towel. Spread a quarter of the lamb mixture in a line widthwise, leaving a 4cm border on each side. Roll halfway, fold in the sides, then roll to enclose the filling (avoid rolling too tightly). Repeat with the rest of the filo, oil, and lamb mixture to create 4 rolls.
  • Lay the sausage rolls on a baking sheet. Brush with oil and score the pastry diagonally at 3cm intervals to create 6 portions. Sprinkle with za'atar seasoning. Bake on the top oven rack for 30 minutes until the pastry is golden and the meat is cooked.
  • Peel off the charred skins from the capsicums and throw away. Blend capsicums, onions, and pan juices in a food processor until creamy. Season to taste. Yields ¾ cup of delicious capsicum ketchup.
  • Slice the sausage rolls along the score marks and enjoy them right away with capsicum ketchup.
