Ingredients:
  • 1 small red onion, finely chopped
  • 500g lamb mince
  • 50g breadcrumbs
  • 62.50 ml fresh mint leaves, chopped
  • 1 egg, lightly beaten
  • Dinner rolls, cheddar slices, baby cos lettuce leaves, carrot ribbons, cucumber slices, tomato relish, to serve
Instructions:
  • In a frying pan over medium heat, heat half of the oil. Sauté the onion for 3 minutes until softened. Stir in the garlic and cumin and cook for an additional minute.
  • Transfer the mixture to a bowl to cool slightly, then incorporate the lamb mince, breadcrumbs, mint, and egg. Use your hands to blend the ingredients thoroughly. Divide the mixture into 14 portions and shape each into 6cm patties.
  • Heat the remaining oil in the pan over medium heat and cook the patties in batches for 5 minutes on each side until fully cooked.
  • Slice the rolls in half and toast them until golden brown. Layer the cheddar cheese, crisp lettuce, fresh cucumber slices, juicy meat patty, tangy tomato relish, and delicate carrot ribbons on the rolls.
