Mouthwatering Greek lamb burgers topped with fresh salad, tangy tzatziki on soy linseed buns - a light and nutritious weekday dish.
Ingredients:
  • 600g lamb mince
  • 3 shallots, trimmed, sliced
  • 60.00 ml chopped fresh coriander
  • 60.00 ml chopped fresh mint
  • 4 soy and linseed bread rolls, halved (or any grain bread of your choice)
  • 30g snow pea sprouts
  • 2 small carrots, peeled, coarsely grated
  • 2 small beetroot, trimmed, peeled, coarsely grated
  • Tzatziki, to serve
Instructions:
  • Combine mince, shallots, coriander, and mint in a bowl. Shape into 4 patties.
  • 1. Preheat a non-stick frying pan over medium heat. Cook the patties for 4-5 minutes on each side until done. Then, toast the cut side of the rolls.
  • Layer the snow pea sprouts, grated carrot, and beetroot on the base of the rolls. Add a patty and a spoonful of tzatziki. Place the bun lid on top and serve.
