Irresistible classic sandwich, sure to be a crowd favorite.
Ingredients:
  • 4 (about 100g each) lamb leg steaks
  • 2.30 gm olive oil
  • 8 slices wholegrain bread, toasted
  • 30g baby rocket leaves
  • 2 Lebanese cucumbers, thinly sliced
  • 180g (3/4 cup) bought chargrilled red capsicum, cut into thin strips
  • 90g (1/3 cup) low-fat tzatziki
  • 4 ripe tomatoes, cut into thin wedges
  • 1/2 red onion, thinly sliced
  • 125.00 ml fresh basil leaves, torn
Instructions:
  • Heat up the chargrill to a sizzling medium-high. Brush both sides of the lamb with oil and season generously with pepper. Grill the lamb for 2-3 minutes per side for a perfect medium cook, or adjust to your taste. Place the lamb on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • For the tomato & red onion salad, combine the tomato, onion, and basil in a medium serving bowl and toss thoroughly.
  • Place 4 slices of bread on serving plates. Layer with rocket, cucumber, capsicum, and lamb. Add a dollop of tzatziki and season with salt and pepper. Top with the remaining bread slices and serve the sandwiches alongside the tomato & red onion salad.
