Elevate a classic dish for a deliciously exciting experience!
Ingredients:
  • 80ml (1/3 cup) olive oil
  • 400g piece round pancetta, (see note) cut into 2cm strips
  • 4 onions, thinly sliced
  • 2 carrots, halved lengthwise, thinly sliced
  • 4 parsnips, peeled, halved lengthwise, thinly sliced
  • 3 tsp finely chopped rosemary
  • 1.5kg lamb shoulder, cut into 3cm pieces
  • 100g tomato paste
  • 35g (1/4 cup) plain flour
  • 250ml (1 cup) red wine
  • 500ml (2 cups) beef stock
  • 1 bulb garlic, halved horizontally
  • 1 bay leaf
  • 375g packet butter puff pastry, (see note) thawed
Instructions:
  • In a large casserole over medium heat, warm 2 teaspoons of oil. Sauté pancetta for 5 minutes until browned, then transfer to a bowl. In the same pan, add 1 1/2 tablespoons of oil, onions, and 2 teaspoons of salt. Cook for 10 minutes until onions are soft. Add vegetables and rosemary, stir for 3 minutes until vegetables soften. Mix in the pancetta and set aside the pan.
  • Coat lamb with 2 tablespoons of oil, salt, and pepper. Sear lamb in batches for 5 minutes until browned. Add pancetta, vegetables, tomato paste, and flour. Stir in wine and let it simmer until reduced by three-quarters. Pour in stock, add garlic and bay leaf, then simmer covered for 2 hours until tender. Remove garlic before serving.
  • Preheat the oven to 220C. Cut out 12 pastry lids using the dishes for the pies as a guide. Place the lids on 2 baking paper-lined trays. Score the pastry in a crisscross pattern using the back of a knife, then brush with eggs. Bake for 15 minutes until the lids are puffed and golden brown, swapping trays three-quarters of the way through to ensure even cooking (avoid swapping trays halfway to prevent pastry deflation).
  • Heat the lamb mixture over medium heat until warm, then distribute it evenly among the pie dishes. Cover each dish with pastry lids and serve right away for a delightful meal.
