Elevated sausage sizzle with gourmet flair.
Ingredients:
  • olive oil cooking spray
  • 1 large brown onion, halved, thinly sliced
  • 4 thick lamb sausages
  • 4 long bread rolls
  • 20g baby spinach
  • 2 medium tomatoes, thinly sliced
  • 50g baby spinach
  • 125.00 ml dry-roasted almonds
  • 62.50 ml finely grated parmesan cheese
  • 56.88 gm olive oil
Instructions:
  • Oil the barbecue plate generously and heat it over medium-high heat. Add onion and cook, stirring occasionally, for 5 minutes until softened. Transfer to a plate and cover to keep warm. Cook sausages, turning occasionally, for 7 to 10 minutes until cooked through.
  • Prepare the Spinach Pesto by blending spinach, almonds, parmesan, oil, lemon juice, and 2 tablespoons of cold water until finely chopped and nearly smooth.
  • Slice the rolls in half lengthwise without cutting all the way through. Fill each roll with spinach, tomato, onion, and 1 sausage. Finish with a generous dollop of pesto before serving. Enjoy!
