Lamb and vegetable fajitas

Whip up delicious Mexican dishes effortlessly at home.
Ingredients:
  • 8 fajita tortillas (Old El Paso brand)
  • 1/2 red onion, cut into thin wedges
  • 1/2 small red capsicum, deseeded, cut into thin 5cm-long strips
  • 2 garlic cloves, crushed
  • 150g lamb fillets, fat trimmed, cut across the grain into 1cm-thick slices
  • 8 butter lettuce leaves, washed, dried
  • 95g (1/3 cup) bought mild chunky salsa
Instructions:
  • Preheat the oven to 180°C and wrap the tortillas in foil.
  • Bake the wrapped tortillas in the preheated oven for 8-10 minutes, or until they are heated through.
  • Heat 2 teaspoons of oil in a large frying pan over medium heat. Cook onion, capsicum, and garlic for 3-4 minutes until softened. Transfer to a bowl and set aside.
  • Heat the rest of the oil in a hot pan. Cook the lamb, tossing frequently, for 2-3 minutes until just cooked through. Add back the onion mixture and mix well. Transfer to a bowl. Serve immediately on tortillas with lettuce, lamb, and salsa. Kids can have fun making their own fajitas!
