Whip up a quick and elegant lamb and zucchini dish in just 15 minutes!
Ingredients:
  • 2 medium Golden Delicious apples, peeled, cored, cut into lcm pieces
  • 40.00 gm caster sugar
  • 40.00 gm water
  • 20.00 ml finely chopped fresh mint
  • Salt & ground black pepper
  • 4 small zucchini, thinly sliced lengthways
  • 4 (about 450g) Trim Lamb leg steaks
  • 4 wholemeal dinner rolls, to serve
Instructions:
  • In a small saucepan over medium-low heat, gently cook the apples with sugar and water. Cover and occasionally stir for 12-15 minutes until the apples are soft. Take off the heat and mix in fresh mint, salt, and pepper according to your taste preference.
  • Heat up 1 tablespoon of olive oil in a large frying pan over medium-high heat. Cook the zucchini for 1-2 minutes on each side until tender. Set aside.
  • Season the lamb steaks with salt and pepper. Cook them in the frying pan with olive oil for 3-4 minutes per side until medium or cooked to your preference. Reheat the zucchini in the pan. Plate the lamb and zucchini with minted apples and bread rolls.
