Spicy lamb arrabbiata with rich tomato sauce - a quick and delicious midweek meal.
Ingredients:
  • 2 x 240g pkts cherry truss tomatoes
  • 470g lamb steaks, trimmed, thinly sliced
  • 1 large onion, chopped
  • 3 garlic cloves, finely chopped
  • 2 tsp chilli paste
  • 1 small red capsicum, deseeded, chopped
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 300g wholegrain spaghetti
  • 150g green beans, split, blanched
  • Thickly shredded cheese, to serve
  • Fresh basil leaves, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line a baking tray with baking paper and arrange the tomatoes on it. Bake for 15 minutes until juicy and tender.
  • Heat 2 tsp oil in a large frying pan over medium-high heat. Sear lamb for 3-4 minutes until browned, then transfer to a bowl. Add the remaining oil to the pan and sauté onion, garlic, and chilli paste for 2 minutes. Stir in capsicum for an additional 2 minutes. Mix in chopped tomato and simmer for 5 minutes. Finally, return lamb to the pan and cook for 5 minutes more until done.
  • Prepare the pasta according to the instructions on the packaging. Once cooked, drain the pasta and place it back in the pan. Add the seasoned lamb mixture and mix thoroughly. Serve the delicious mixture with fresh tomatoes, crisp beans, grated cheese, and fragrant basil leaves.
