Lamb broccolini and chilli stir fry

Stir-fried lamb and broccoli for a delicious and balanced meal.
Ingredients:
  • 76.25 gm oyster sauce
  • 40.00 ml dry sherry
  • 36.40 gm peanut oil
  • 500g lamb fillet, trimmed, thinly sliced
  • 2 fresh long red chillies, seeded, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 tsp grated ginger
  • 1 bunch broccolini, trimmed, halved
  • 4 green onions, trimmed, sliced
  • 63.75 gm chicken stock
  • 350g pkt fresh thin egg noodles
Instructions:
  • Mix oyster sauce and sherry in a small bowl.
  • Heat half of the oil in a hot wok or large frying pan. Quickly stir-fry the lamb in two batches until golden brown, then transfer to a bowl.
  • Heat the remaining oil in a wok. Stir-fry the chili, garlic, and ginger for 1 minute. Add the broccolini, onion, and stock. Stir-fry for 2-3 minutes until the broccolini is tender.
  • Add the lamb back to the wok along with the sherry mixture and noodles. Stir-fry everything for 1-2 minutes until heated through.
