Savor the vibrant Asian flavors in this healthy and simple lamb stir-fry.
Ingredients:
  • 40.00 ml Chinese rice wine
  • 12.20 gm oyster sauce
  • canola oil spray
  • 500g lamb leg steaks, thinly sliced
  • 2 fresh long red chillies, deseeded, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 500g broccoli, cut into florets
  • 60ml (1/4 cup) salt reduced chicken style liquid stock
  • 6 shallots, ends trimmed, cut into 4cm lengths
  • 125.00 ml coarsely shredded fresh mint leaves
  • Steamed Basmati rice, to serve
Instructions:
  • Mix the Chinese rice wine and oyster sauce in a small bowl.
  • Preheat a wok over high heat and lightly coat it with canola oil spray. Stir-fry one-third of the lamb until browned, for about 1-2 minutes. Transfer to a heatproof bowl. Repeat this process in two more batches with the rest of the lamb, making sure to reheat the wok between batches.
  • Preheat the wok over high heat and lightly coat with canola oil spray. Stir-fry chili and garlic for 1 minute. Toss in broccoli and stock, stir-fry for 2 minutes. Add shallot and cook for another minute until slightly softened. Enjoy!
  • Stir-fry the lamb and rice wine mixture in the wok for 1-2 minutes until heated through. Serve with steamed rice.
