Lamb and broccoli stir fry

Succulent lamb stir-fried with broccoli in a delicious noodle dish.
Ingredients:
  • 450g pkt thin hokkien noodles
  • 18.40 gm vegetable oil
  • 500g lamb stir fry strips
  • 2 stalks celery, thinly sliced diagonally
  • 1 small head broccoli, cut into small florets
  • 60.00 ml kecap manis (or 60.00 ml soy sauce mixed with 60.00 ml honey)
  • 63.00 gm lime juice
  • 40.00 gm water
  • 1 red onion, halved, sliced lengthways
  • 1 carrot, halved, sliced lengthways
Instructions:
  • Place the hokkien noodles in a large heatproof bowl and pour boiling water over them. Let sit for 5 minutes, then fluff the noodles with a chopstick or fork to loosen. Drain thoroughly.
  • Heat half of the oil in a wok or deep frying pan over high heat. Brown the lamb strips in 4 batches until well browned, then set aside. Add the rest of the oil to the wok and stir-fry the onion for 1 minute.
  • Toss in the celery, carrot, and broccoli. Stir fry for 2 minutes. Pour in 2 tablespoons of water and continue stir frying for another 1-2 minutes until the veggies are tender but still crisp.
  • Combine kecap manis, lime juice, and cooked noodles in the pan with the lamb. Toss everything together using wooden spoons until heated through and well mixed. Serve in bowls.
