Lamb chops baked in foil with veggies, feta, and garlic for a flavorful meal.
Ingredients:
  • aluminum foil
  • 6 (8 ounce) lamb shoulder chops
  • 3 tablespoons minced garlic
  • 2 sprigs chopped fresh rosemary
  • 3 small zucchini, halved
  • 6 small carrots, halved
  • 8 ounces mushrooms, halved
  • 3 onions, sliced
  • 6 tablespoons butter
  • 6 teaspoons freshly squeezed lemon juice
  • 1 (8 ounce) package feta cheese, cut into 6 squares
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Lay 1 large piece of heavy-duty aluminum foil horizontally on your work surface. Place 1 lamb chop and vegetables in the center. Cover with another large piece of foil vertically.
  • Lay 1 lamb chop in the center of the aluminum foil and massage with 1/2 tablespoon of garlic, salt, pepper, and rosemary. Repeat for the rest of the chops.
  • Create delightful parcels by layering zucchini, carrots, mushrooms, and onion on each lamb chop. Add a dollop of butter and a splash of lemon juice, then crown each with a decadent square of feta cheese. Enclose each masterpiece by carefully double-wrapping with foil.
  • Roast in the oven until lamb is cooked to a perfect pink center, ensuring it reaches at least 140°F (60°C) when checked with a thermometer. Serve each parcel individually to guests.
