Lamb cutlets with broad bean mash

Whip up our savory lamb cutlets for a budget-friendly gourmet delight!
Ingredients:
  • 65.63 gm thick mint sauce
  • 8 lamb cutlets, trimmed
  • 500g frozen broad beans
  • 37.60 gm sour cream
  • potato wedges, to serve
Instructions:
  • In a large glass or ceramic dish, mix together the oil and sauce. Add the cutlets and toss to coat evenly. For enhanced flavor, chill in the refrigerator for 30 minutes, if possible.
  • Preheat your barbecue plate or chargrill on high heat, then reduce to medium. Cook the lamb for 3 minutes on each side, basting with marinade, until it reaches your desired level of doneness. Place the lamb on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • While you wait, put broad beans in a microwave-safe bowl. Pour in 1/4 cup of cold water and cover with plastic wrap. Microwave on high for 4 to 5 minutes until tender. Drain and rinse under cold water. Peel off the skins, return beans to the bowl, cover, and microwave on high for 1 minute. Gently mash the beans, then mix in sour cream, season with salt and pepper, and stir well.
  • Plate the lamb alongside mashed potatoes and potato wedges.
