Succulent lamb cutlets with spicy mango salsa are the perfect summer dish. Grilled to perfection, these cutlets are bursting with flavor.
Ingredients:
  • Mango chutney, to serve
  • Pappadums, to serve
  • Lime wedges, to serve
  • 12 Lamb Cutlets
  • 56.00 gm tikka masala curry paste
  • Steamed basmati rice, to serve
  • Chilli-mango sambal
  • 1 large ripe mango, stoned, peeled, finely chopped
  • 1/2 red onion, finely chopped
  • 1 Lebanese cucumber, finely chopped
  • 40.00 ml coarsely chopped coriander
  • 40.00 ml finely shredded mint
  • 1 long red chilli, seeded, finely chopped
  • 42.00 gm lime juice
Instructions:
  • Combine the juicy mango, crisp onion, crunchy cucumber, fresh coriander, mint, spicy chilli, and zesty lime juice in a bowl. Season to perfection.
  • Mix the lamb and curry paste in a spacious bowl until evenly coated. Season to taste.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the lamb for 2 minutes on each side for medium, or to your preferred doneness. Remove from heat and place on a plate, then cover with foil. Allow it to rest for 5 minutes before serving.
  • Plate the lamb individually on serving dishes and generously spoon the flavorful chilli-mango sambal on top. Accompany with rice, chutney, pappadums, and refreshing lime wedges.
