Lamb kafta

Ingredients:
  • 2 brown onions, finely chopped
  • 1kg lamb mince
  • 250.00 ml fresh continental parsley leaves
  • 2 tsp ground black pepper
  • 2 tsp ground allspice
  • 27.30 gm olive oil
  • 3 garlic cloves, finely chopped
  • 1 tsp sumac (see note)
Instructions:
  • Set aside 2 tablespoons of the chopped onion and add the rest to a large bowl. Combine with lamb mince, parsley, pepper, and allspice, using your hands to mix thoroughly.
  • Add half of the lamb mixture to the food processor and blend for 30 seconds until thoroughly combined. Transfer to a large bowl and repeat the process with the remaining lamb mixture.
  • Shape the lamb mixture into 12 portions with your hands, then mold each portion around a skewer to create a 15cm-long sausage shape.
  • In a medium frying pan over medium-high heat, heat the oil. Cook 4 lamb kaftas for about 10 minutes, turning occasionally, until cooked through. Transfer to a plate, cover with foil to keep warm, and repeat with the remaining kaftas in 2 more batches.
  • In a small bowl, mix the garlic, sumac, and reserved onion. Sprinkle the lamb kaftas on a serving plate with the onion mixture. Serve promptly.
