Whip up this quick and affordable meal with just six simple ingredients!
Ingredients:
  • 82.50 ml couscous
  • 82.50 gm boiling water
  • 700g lean lamb mince
  • 1 small brown onion, grated (see note)
  • 87.50 gm korma curry paste
  • 62.50 ml finely chopped fresh mint leaves
  • 4 wholemeal pita pockets
Instructions:
  • In a large heatproof bowl, combine couscous and boiling water. Cover and let stand for 4 minutes. Fluff the grains with a fork to separate.
  • Combine ground meat, chopped onion, flavorful curry paste, and fresh mint with the couscous. Season generously with salt and pepper, then mix everything together thoroughly.
  • Prepare a baking tray by lining it with baking paper. Form the mixture into twelve 8cm-long oval shapes and place them on skewers. If possible, chill in the refrigerator for 30 minutes.
  • Preheat a greased barbecue plate or chargrill over medium heat. Grill skewers, turning occasionally, for 8 to 10 minutes or until fully cooked. Enjoy with pita bread.
