Lamb shank filo rolls with yoghurt dipping sauce

Ingredients:
  • 4.60 gm olive oil
  • 2 large lamb shanks
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 5.00 gm ground cumin
  • 2.50 gm ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 x 400g can diced tomatoes
  • 1L (4 cups) water
  • 10 sheets filo pastry
  • Olive oil spray
  • 260g (1 cup) low-fat natural Greek-style yoghurt
  • 60ml (1/4 cup) water
  • 82.50 ml chopped fresh mint
Instructions:
  • - Heat oil in a large saucepan over medium-high heat. Brown lamb shanks for 4-5 minutes. Transfer to a plate. - Reduce heat to medium-low and add onion and garlic. Cook until soft. - Stir in cumin, cinnamon, cloves, and allspice to coat.
  • Combine tomato, water, salt, and pepper in a pot and bring to a boil. Lower the heat, gently add the lamb, cover, and simmer for 3 hours until tender. Transfer the lamb to a plate. Increase heat to high and boil for 25 minutes or until the sauce thickens.
  • Remove the meat from the bones and shred it. Transfer the shredded lamb to a bowl. Mix in the sauce until fully coated. Season generously with salt and pepper.
  • Lay out the filo sheets on a clean work surface and cover them first with a dry tea towel, then a damp one to keep them moist. Spray one sheet with oil and fold it in half. Cut the folded sheet in half and spray with oil. Place 1 tablespoon of the lamb mixture on one side of each piece of filo, leaving a 2cm border on each end. Fold in the ends and roll up to seal. Repeat with the rest of the filo sheets and lamb mixture.
  • Preheat your oven to 200°C. Line a large baking tray with non-stick baking paper, then place the rolls on it. Give them a light spray of oil and bake for 15 minutes until they turn golden.
  • Prepare the dipping sauce by mixing the yogurt, water, and fresh mint in a small bowl. Season with a pinch of salt and pepper for flavor.
