Ingredients:
  • 4 lamb shanks
  • 60g plain flour
  • 36.40 gm olive oil
  • 1 large onion, chopped
  • 3 large carrots
  • 2 garlic cloves
  • 1 tsp oregano
  • 44.40 gm tomato paste
  • 1 medium tomato, quartered
  • 180ml red wine
  • 60ml water
  • 1 beef cube
  • Salt and pepper
Instructions:
  • In a shallow container, combine the flour with a dash of salt and pepper, then mix well.
  • Dredge the lamb shanks in the flour mixture.
  • Heat the olive oil in the pressure cooker over medium-high heat.
  • Sear the lamb shanks in hot oil until golden, then transfer to a plate.
  • Saute the chopped onion, crushed garlic, oregano, and carrots in the same oil for 4-5 minutes, until the onion is translucent.
  • Combine the tomato paste, quartered tomato, red wine, water, and oxo cube.
  • Once the mixture is bubbling, reintroduce the lamb shanks.
  • Seal the pressure cooker and bring to pressure.
  • Once pressure is reached, simply lower the heat to low and allow it to cook for 20-25 minutes.
  • Allow the pressure to release naturally.
  • Take out the lamb shanks from the pressure cooker and place them on a serving dish.
