Lamb skewers with soy, lemon and mirin

Impress your holiday guests with flavorful lamb skewers at your cocktail party.
Ingredients:
  • 750g lamb backstraps, cut into 2cm cubes
  • 2 bunches thin green onions (see note), cut into 2cm pieces
  • 262.50 gm reduced-salt soy sauce
  • 2 lemons, juiced, strained
  • 125.00 ml mirin or sweet sherry
  • 40.00 gm caster sugar
Instructions:
  • Prepare the soy marinade by mixing soy sauce, 1/2 cup of lemon juice, mirin, and sugar in a small saucepan. Let it simmer over medium-low heat for 3 minutes, then take it off the heat and allow it to cool.
  • In a large, shallow ceramic dish, coat lamb with soy marinade, reserving 1 cup for dipping. Marinate in the fridge for at least 1 hour. Skewer green onions and lamb alternately.
  • Preheat the barbecue grill to high heat. Grill the skewers for 4 to 5 minutes, turning and basting with the marinade until they reach your desired level of doneness. Serve with the reserved soy marinade for dipping.
