Lamb skewers with soy, lemon and mirin

Impress your guests this holiday season with delicious lamb skewers perfect for your cocktail party.
Ingredients:
  • 750g lamb backstraps, cut into 2cm cubes
  • 2 bunches thin green onions (see note), cut into 2cm pieces
  • 262.50 gm reduced-salt soy sauce
  • 2 lemons, juiced, strained
  • 125.00 ml mirin or sweet sherry
  • 40.00 gm caster sugar
Instructions:
  • Prepare the soy marinade by gently simmering soy sauce, 1/2 cup of lemon juice, mirin, and sugar in a small saucepan for 3 minutes. Then, take it off the heat and let it cool to achieve the perfect balance of flavors.
  • In a large, shallow ceramic dish, add the lamb and pour the soy marinade over it, setting aside 1 cup for dipping. Make sure the lamb is well coated. Cover and refrigerate for at least 1 hour. Thread the green onion and lamb alternately onto skewers for grilling.
  • Preheat a hot barbecue grill. Grill skewers, basting occasionally with marinade, for 4 to 5 minutes or until desired doneness. Serve with extra soy marinade for dipping.
