Delicious lamb stew with tender meat braised in beer, potatoes, cumin, and cilantro - a new family favorite!
Ingredients:
  • 0.25 cup vegetable oil
  • 4 teaspoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 2 pounds boneless lamb shoulder, cut into 2-inch pieces
  • 1 onion, chopped
  • 1 (12 fluid ounce) can or bottle beer
  • 1 bunch fresh cilantro
  • 1 bay leaf
  • 4 potatoes, peeled and cubed
  • 0.25 cup water or broth, or as needed
Instructions:
  • In a bowl, mix together vegetable oil, lemon juice, garlic, cumin, salt, and black pepper. Add cubed lamb and let it marinate for around 30 minutes.
  • In a hot skillet, sear the meat on all sides for 3 minutes per side. Set aside. Lower the heat, add onion, and sauté until soft and translucent, around 5 minutes.
  • Add the cooked lamb back to the skillet and combine with beer and cilantro. Season with bay leaf, salt, and pepper. Cover and gently simmer for approximately 1 hour. Introduce potatoes to the mix, cover, and continue cooking over low heat until potatoes are tender, for about 30 minutes. If needed, add water or broth to keep the ingredients covered.
