Grilled lamb with refreshing couscous salad, ideal for summer.
Ingredients:
  • 4 (125g each) trim lamb leg steaks
  • 2 tsp dried Italian herbs
  • olive oil cooking spray
  • 60g mixed salad leaves, to serve
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 200g grape tomatoes, halved lengthways
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 1 small avocado, peeled, cut into cubes
  • 66.25 gm 100% fat-free French herb dressing
Instructions:
  • Preheat a barbecue grill or non-stick frying pan over medium-high heat. Place the steaks on a plate and generously season with all the herbs, rubbing them in with your fingers to coat both sides. Lightly spray the steaks with oil before grilling.
  • Prepare Couscous Salad: Place couscous in a bowl, pour boiling water over it, cover with foil, let it sit for 3 to 5 minutes to absorb the water. Fluff with a fork, cool for 15 minutes. Add tomatoes, cucumber, avocado, drizzle with dressing, season with salt and pepper, and stir until combined.
  • Grill steaks for 2 minutes on each side for a perfect medium cook, or until desired doneness. Let them rest covered for 3 minutes. Serve alongside a delicious couscous salad and fresh salad leaves.
